Easy and Quick Black Bean and Corn Salsa Recipe

Corn and black bean salsa is one of the first recipes I can recall making my own.  I got really interested in cooking in high school when I was home a lot and sick with thyroid issues.  Reading cooking magazines and cooking for my family healthy meals was a big part of my later high school years.  So, I guess you could say I’ve been cooking for family long before I had one of my own!

I love corn and bean salsa because it’s a great appetizer, salsa, or side dish with some grilled chicken.  In an old binder where I tore out and stored recipes, I have written down, “Laura’s version” of this one.  Little did I know I’d be tweaking recipes and making them my own for years to come.

Reasons to Love this Delicious Salsa

While this would be delicious in the summer with sweet corn and other fresh ingredients you could add like fresh cilantro or red bell pepper, my version is packed with pantry staples.  This Ohio girl needed something fresh even in the cold of winter!  

It’s a healthy snack thanks to hearty black beans and canned corn and the fresh lime juice really does help brighten it all.  I could eat it with a spoon but I know my family will take out the crunchy tortilla chips and enjoy it as a homemade salsa.

We’ve still got some tomatoes on the vine so I’ll add those into the salsa this weekend. Soon I’ll be back to the grocery store having to purchase cherry tomatoes.  I think it’s finally the weekend to tear out the tomatoes with the temperatures in the 40’s at night and I can’t hardly believe it!

Homemade Salsa Anyone?

I’m curious if you’re a fan of healthy salsa like this?  Do you realize how easy it is to make thanks to a few ingredients?  I like to make a big batch in a large mixing bowl if I’m bringing it somewhere and then store everything in an airtight container for the week ahead.  It’ll keep for several days!


When you’re ready to assemble you’ll simply need a colander, sharp knife, and some spices.  This really isn’t a spicy salsa, though you could add cayenne or hot sauce if you want to add some spice and increase the heat level.  You could also add jalapeno pepper in this easy black bean corn salsa to get more heat!  

Dinner Idea

It’s a big hit with people who like things like cowboy caviar or pineapple salsa because of the bite and texture.  I love it with the inevitable taco bowl situation that happens almost weekly.  My husband enjoys this, but he also likes food to be warm which makes me think I could make up a baked potato, buffalo chicken, and this black bean corn salsa recipe and call it dinner.  There’s an idea for you too! 

I recently brought it to a friends house with some chips and was so glad I kept these festive napkins around.  I’m becoming more and more minimal in what I want to keep in our house but kitchen linens aren’t going away any day soon.

This recipe also will serve you well if you’ve got cans stocked in your pantry!  These days, a well stocked pantry is a must.  So, grab a large bowl, a can of black beans, can of corn, some plum tomatoes and lime and make this!  I hope you enjoy this easy recipe whether you have it with dinner, as a healthy appetizer, or to sneak a favorite protein in the form of this healthy dip! 

Easy and Quick Corn and Black Bean Salsa

This is full of pantry staples but feel free to use fresh corn when it's in season!

Ingredients
  

  • 1 can corn drained
  • 1 can black beans drained
  • 1 cup diced cherry tomatoes
  • 1/2 cup chopped red onion
  • 1 tsp. ground cumin
  • 4 T. lime juice
  • 1 T extra-virgin olive oil
  • 1 tsp. minced garlic
  • 1/2 t. salt or more to taste

Instructions
 

  • I like to make this a few hours ahead of serving so that the flavors can blend and the salsa can chill but it is still delicious at room temperature.
  • To make the salsa simply add all of the ingredients to a bowl and combine.
