Creamy Italian Sausage and Spinach Tortellini Soup
Calling every Mom who needs an easy meal for dinner ready under 30 minutes! This one’s for you. It’s the beginning of the season of cheesy tortellini soup. Add Italian sausage, fresh spinach and some half and half to your next grocery trip. I guess you could skip the cream, but not for this recipe.

I forget about making simple recipes like this until I make it and am reminded it needs to be in our meal rotation about every other week. Problem is we don’t really have a meal rotation. Do you?
I love to make new recipes often, but this week I recalled making a similar cheese tortellini soup months ago and knew it was time to try it again this week. So, on my recent trip to Costco fresh tortellini was added to the cart for a night in the near future that’ll star this creamy tortellini soup recipe. I always have Italian sausage and Italian seasoning on hand, parmesan cheese and of course, diced tomatoes.
Hopefully for you this is an easy tortellini soup recipe that can come together with a lot of pantry items on hand. It’s one of those delicious soup recipes for picky eaters and one you can always add more fresh vegetables to if your kids are more adventurous. Think carrots and zucchini! Kale over spinach. There’s only a handful of ingredients in this base recipe, but don’t let that limit you!
Dinner on the Table Quickly
This season of life is very full and time isn’t exactly on our side. I need to feed my family well and also not stress about it. I want that for you too and have a feeling you feel the same way most nights.
It’s my hope that this recipe will help you do just that! Simple one pot wonder meals are some of my favorites. There’s less cleanup and generally speaking, less work.
The cooking time should be under thirty minutes on the stove top, you could use frozen tortellini if you don’t have fresh, and vegetable broth or chicken stock are both options. I also like having better than bouillon on hand in place of buying cartons of stock. Making homemade stock is a great option as well for after when you have a whole chicken for dinner!
Slow Cooker Option?
If you decide to turn this into a slow cooker soup, I’d recommend you saute onion and butter before adding to the crock pot. I’d also wait to add the cream and tortellini until the last ten to twenty minutes. You want to have tender tortellini, but not too tender! It’s a good idea to add spinach towards the end as well. If you need to increase the heat on your slow cooker at the end, that will help everything blend together well.
Can I Vary this Recipe?
Of course you can. If you don’t love Italian sausage, try leftover chicken. Creamy broth not your favorite, skip the half and half all together. This version is really one of those cozy soups and it’s meant to be a family favorite for you. So, vary things as you need to and come up with a finished soup that you’re proud to serve in individual bowls.

Creamy Italian Sausage and Spinach Tortellini Soup
Ingredients
- 1 tbsp extra virgin olive oil or avocado oil
- 1 tbsp butter
- 1 onion chopped
- 5 garlic cloves minced
- 1 lb Italian Sausage casings removed
- 6 ounces tomato paste
- 7 cups water
- 1 heaping tablespoon of vegetable better than bouillon
- 28 ounces diced tomatoes
- 1 tsp thyme
- 1 tsp rosemary
- 2 tsp basil
- 24 ounces tortellini
- 1 1/2 cups half and half
- 1 tbsp flour
- 5 ounces spinach
- 1 1/2 teaspoons kosher salt
Instructions
- Heat a large dutch oven then place your oil and butter in the pot.
- Next add your onion and garlic and allow to soften for 3-5 minutes.
- Now add in the tomato paste, cooking for about 2 minutes.
- At this point add in your broth or water and better than bouillon, diced tomatoes and spices.
- Bring everything to a boil and then simmer for 10 minutes.
- Place the tortellini in the soup and allow to cook for 5 minutes.
- Mix the flour and half and half together then pour into the soup, stirring to combine.
- Now add in your spinach and season with salt.
- Make sure everything is heated through and serve immediately!
