Creamy Italian Sausage and Spinach Tortellini Soup

Ingredients
  

  • 1 tbsp extra virgin olive oil or avocado oil
  • 1 tbsp butter
  • 1 onion chopped
  • 5 garlic cloves minced
  • 1 lb Italian Sausage casings removed
  • 6 ounces tomato paste
  • 7 cups water
  • 1 heaping tablespoon of vegetable better than bouillon
  • 28 ounces diced tomatoes
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 tsp basil
  • 24 ounces tortellini
  • 1 1/2 cups half and half
  • 1 tbsp flour
  • 5 ounces spinach
  • 1 1/2 teaspoons kosher salt

Instructions
 

  • Heat a large dutch oven then place your oil and butter in the pot.
  • Next add your onion and garlic and allow to soften for 3-5 minutes.
  • Now add in the tomato paste, cooking for about 2 minutes.
  • At this point add in your broth or water and better than bouillon, diced tomatoes and spices.
  • Bring everything to a boil and then simmer for 10 minutes.
  • Place the tortellini in the soup and allow to cook for 5 minutes.
  • Mix the flour and half and half together then pour into the soup, stirring to combine.
  • Now add in your spinach and season with salt.
  • Make sure everything is heated through and serve immediately!

Notes

You'd never freeze this soup but it's not a problem, you'll eat it up fast enough!
