extra virgin olive oil
or avocado oil

butter

onion
chopped

garlic cloves

Italian Sausage
casings removed

tomato paste

water

heaping tablespoon of vegetable better than bouillon

ounces
diced tomatoes

tsp
thyme

tsp
rosemary

tsp
basil

tortellini
1 1/2
cups
half and half
1
tbsp
flour

ounces
spinach
1 1/2
teaspoons
kosher salt
Instructions
Heat a large dutch oven then place your oil and butter in the pot.
Next add your onion and garlic and allow to soften for 3-5 minutes.
Now add in the tomato paste, cooking for about 2 minutes.
At this point add in your broth or water and better than bouillon, diced tomatoes and spices.
Bring everything to a boil and then simmer for 10 minutes.
Place the tortellini in the soup and allow to cook for 5 minutes.
Mix the flour and half and half together then pour into the soup, stirring to combine.
Now add in your spinach and season with salt.
Make sure everything is heated through and serve immediately!
Notes
You'd never freeze this soup but it's not a problem, you'll eat it up fast enough!
