My Mom’s Simple and Delicious Winter Soup Recipe

I love how food can send you back to a time and place you are far from.  This soup does just that.  It’s winter time in Ohio and I’m 12.  My Mom makes this all the time but we don’t mind.  The meat, vegetables and tender potatoes offer a filling soup that warm us all up after another cold night.

There’s no special name for this soup.  People in the 90’s weren’t browning butter or trying to wow their kids with puff pastry creations or the latest trend they saw on Pinterest or Instagram.  There was no tiktok- make recipes out there.  No, this right here is winter soup.

What More do you Need to Know?

Not only is this soup great for a large family, it’s a delicious soup that will quickly become a family favorite.  I’m not one to want to use ground beef in soup, unless it’s this one.  

Mom’s Version vs. Mine

The recipe below is how you should make it just as my Mom would.  However, let me say that I’m horrible at following recipes like these and don’t love when a recipe calls for 1 cup of potatoes or 1 cup of frozen green beans.

Here’s what I’d do.  Swap the 1 cup of potatoes for 1-2 potatoes, based on the size of yours.  Use 2-3 stalks of celery and the entire small package of frozen green beans.  If you need more broth in the end, add it!  Make soup and all food for that matter your own!  Don’t try something the first time and not like it, make a large pot and fit it to your needs!

Tip: I may add bay leaf and some garlic cloves in mine for an added boost to the immune system!  I also may do olive oil in place of butter some nights, but maybe don’t skip the butter in your soup pot.  Mama knows best.

Slow Cooker?

While this soup comes together in about an hour on the stove, you could brown your meat then transfer everything to a slow cooker. I’d probably do low for 6 or high for 4 because of the wine and wanting to get the vegetables tender.

My Mom’s Simple and Delicious Winter Soup Recipe

No special name needed for this classic winter soup, sure to fill you up.

Ingredients
  

  • 2 tablespoons butter
  • 3 medium onions chopped
  • 1 lb ground beef
  • 1 garlic clove minced
  • 3 cups beef broth
  • 28 oz can diced tomatoes
  • 1 cup diced potatoes
  • 3 carrots chopped
  • 1 cup celery chopped
  • 1 cup frozen green beans I used fresh!
  • 1 cup dry red wine
  • 1/2 teaspoon dried basil I used oregano and it was still delicious!
  • 1/4 teaspoon dried thyme
  • salt and pepper for seasoning

Instructions
 

  • In a large dutch oven melt the butter and cook the onion with some salt and pepper until it sweats. If you double the recipe learn from me and just use 2 dutch ovens!
  • Add the beef and garlic and brown the meat with some more salt and pepper.
  • Once it's browned add in the broth, tomatoes, potatoes, celery, carrots, green beans, wine, basil and thyme.
  • Simmer for 1 hour.
  • Check your seasoning and add more salt and pepper as needed!
