8 Ingredient Simple Slow Cooker Beef Stroganoff

For as much as I love cooking, I love when I know dinner is taken care of.  This could not ring more true than on days a full day of activities are ahead, be it sports or Christmas tree hunting! I want to come home to dinner mostly all done and this slow cooker beef stroganoff recipe is a favorite in this house.

​A Great Recipe

I often recommend this crock pot beef stroganoff recipe as something perfect for the day you’re out to get your Christmas tree.  The tender beef and hearty mushrooms is such a hearty meal to come home to.   Serve it with a salad or some peas and crusty bread if you’re up for it and you’re all set for a wonderful meal the whole family will enjoy.  Yes, even those picky eaters.

During the holidays we get an overwhelm of turkey and ham, so I like incorporating this slow-cooker beef stroganoff into the meal rotation. Have company coming into town? Don’t fret over a recipe getting too dry in a dutch oven and consider something like this.  

I like using a chuck roast, but beef stew meat works, as would a chuck steak or sirloin steak.  We purchase half of a cow at time so I’ve used another cut of beef as well, most recently a round roast, and the dish still came out well!  Wonderful recipes are more forgiving I find!

Pantry Staples

In this recipe I don’t use anything like cream cheese or condensed soup.  I generally always have a roast in my freezer, dijon mustard, and sour cream.  The only thing I need to buy close to cooking time are the mushrooms.  I prefer fresh sliced baby bella mushrooms, but any fresh mushrooms will do.

I always have egg noodles on hand as they are cheap and last awhile.  I don’t make a lot of creamy mushroom sauce recipes, but knowing the whole ingredients in this one,

When assembling dish into your slow cooker you’re going to need your cooking beef or choice, your onion and mushrooms.  Sour cream and dijon mustard are your next biggest ingredients along with the cornstarch.  I’d omit salt as an official ingredient, but omitting it all together would turn this from being the best stroganoff recipe to potentially the worst, so don’t forget the salt!  This easy recipe recipe really does come together so quickly!  

So do you have memories of beef stroganoff that may relate to tv-dinner  beef stroganoff?  Or maybe the thought of delicious brown food sounds less than to you.  I highly recommend you make this classic recipe.  I’m all about whole foods, don’t love the use of canned soups and still get creamy beef over noodles here!  It cooks a long time, so you don’t have to!

Ingredients
  

  • 1 3 pound chuck roast trimmed of fat and cut into 1 inch cubes
  • 1 pound baby bella mushrooms sliced
  • 1 medium onion sliced
  • 2 tsp. kosher salt
  • ½ cup sour cream
  • 2 tablespoons dijon mustard
  • 2 tablespoons Cornstarch
  • 1 package, wide egg noodles

Instructions
 

  • In a slow cooker, place your cubed chuck roast.
    Top with the diced onion, mushrooms, and season with salt and a few grinds of pepper.
    Cook on low for 8 hours. 
    Once the time is almost up bring a large pot of water to a boil and cook your noodles according to the package directions.
    While the water is heating mix the cornstarch with 1 cup of the liquid in the slow cooker.  Try and just get the liquid without the mushrooms!  
    Place this mixture in a small saucepan and allow it to thicken for 2-3 minutes, whisking constantly.  Once it has thickened place it in the slow cooker and turn the heat off.  
    To the meat add the sour cream and mustard. Stir to incorporate and season with more salt and pepper if needed.
    Serve over the noodles! Enjoy!

Notes

If you’re gluten free look into  arrowroot powder as an alternative to the corn starch!  
Other cuts of beef work well here.  A cheaper tougher cut will do just fine since it slow cooks for 8 hours!
