Juicy Slow Cooker Drip Beef Sandwiches

It’s time to share with you a favorite dinner recipe in our house, Italian beef sandwiches, or what we commonly call, drip beef sandwiches.  Maybe because of the au jus some may call this by a different name, a french dip sandwich?  Either way, it’s one of those beef recipes the whole family loves.  

Why we love them!

If you’re making these for the first time, its a great crock pot recipe for chuck roast, rump roast, or our preference, sirloin roast.  Honestly, I think you can try any beef roast since you’re cooking them low and slow until fork tender.  Once you’ve had these juicy slow cooker drip beef sandwiches you’ll love what an easy dinner they are.  You’ll also see how they’re such a huge hit for all.  For my family we love them on buttery toasted rolls with a melted slice of provolone on top!  

The spices can be varied depending on the level of spice you like.  We use pepperocini peppers, however banana peppers would work as well.  I was originally inspired by Ree Drummond, the Pioneer Woman, to make these. Now that I think of her recipes, I want to try them with caramelized onions or sauteed peppers as well.  Slow cooking those in a large skillet and topping the meat on a soft hoagie roll with melted provolone cheese on top may just send these to the next level!  

There are lots of ways you could make these so do what works best for your family!  With football season right around the corner, think of this as perfect game day grub as well!  Make a big batch, set out some sub rolls, throw the cooked meat over medium heat in a dutch oven and watch them disappear!  

Thanks to the tablespoons of Italian seasoning there is amazing flavor despite the simple ingredients.  This is a great recipe if you’re short on time in the morning.  You’ll get amazing results 

How I Assemble the Sandwich Rolls

In the morning you’ll place your meat of choice, such as a chuck roast, in the base of your slow cooker.  Season the meat on all sides of the roast with about a teaspoon of salt and black pepper.  Next add your Italian seasoning all over, enough to season the soon to be shredded beef.

At this point you’ll want to get out your remaining ingredients, the jar of pepperocinis.  I like to pour off about half the liquid then dump the entire jar, with the reserved liquid on top of the meat.  This gives it so much flavor!  That step alone only took you a couple minutes!

Next up I put the slow cooker on low for 8 hours!  That’s it!  You could try 4-5 hours on the high setting, but I prefer to cook this recipe on low.

Time to Eat Delicious Sandwiches!

With the beef fork tender you’ll want to shred it with two forks and turn your broiler on.  I get out a baking sheet, the hoagie rolls, and slices of provolone cheese.

Simply open the hoagie buns, slather with tablespoons butter if you’d like or simply place some meat and peppers on top.  Next you’ll place your slices of provolone cheese on top and put the sandwiches under the broiler for a couple of minutes.  Be sure to watch them so they don’t burn! You’re watching for the melted cheese to be perfect,.

Once they’re done, remove from the oven and you’re ready to eat!  I like them by themselves but my boys love to enjoy the au jus in a small dish.  They dip the deli roll into the beef broth with all the flavors and then enjoy!

Sides

I like to serve these with chips and maybe some carrots.  Keep it simple! Next time I may serve them with a side of fries, and actually I’m going to tuck this recipe aside as a great idea for Super Bowl Sunday!  So simple yet hearty and satisfying for a big crowd!

Equipment

  • 1 slow cooker

Ingredients
  

  • lbs Chuck Roast Sirloin or other beef roast can be used
  • 1 32 ounce jar pepperocini peppers banana peppers can be substituted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 package sliced provolone cheese

Instructions
 

  • In your slow cooker place the beef roast then season all over with salt, pepper, and Italian seasoning.
  • Pour out up to one half the liquid in the peppers then dump the entirety of the peppers with the juice on top of the beef.
  • Set the slow cooker to low for 8 hours!
  • Once the beef is done put your oven to broil and get out a baking sheet and your steak rolls. Open them and place some of the beef and peppers on each roll and then top with the provolone cheese.
  • Place the assembled sandwiches under the broiler for 1-3 minutes until the cheese is melted. Check and make sure they don't burn! Remove carefully with hot hands!
  • In a small dish get some of the au jus from the base of the slow cooker and enjoy with your sandwich!
