Quick, Easy and Fluffy Sourdough Discard Pancakes

My two year old wants to read this book on repeat right now at bedtime so I know these pancakes are in our future tomorrow.  The truth is I love using my sourdough starter discard for recipes more than I love making sourdough bread.  We’ve done english muffins in the past and love making sourdough bagels on special occasions.  We love waffles with them weekly and this pancake recipe is another one of my sourdough discard recipes that we find to be such a winner.

I’ve told friends before that I never throw away my discard and it’s pretty true.  If I can I’ll use it in recipes like this one which help the pancakes achieve that fluffy texture then I will.  Active sourdough starter can be used as well and in my opinion it’s not a deal breaker here which you use.  You’ll still be adding baking soda, so there are other leavening agents! Of course if you use active starter, the more fluffy the pancake will be.  Either way this is the perfect recipe and a delicious way to make sure you aren’t really discarding your discard! 

As in most recipes you’ll mix your wet and dry ingredients and then cook your pancakes on medium-high heat over a caste iron skillet.  This is a great recipe for easy sourdough discard pancakes and one I hope you make again and again!  A delicious breakfast really starts the day off right and I know this is one my kids especially love.  

Basic Ingredients

If you don’t already use your sourdough discard in recipes, nows the time to start.  You won’t taste anything off in this sourdough pancake recipe, but they will be light and fluffy for you.  There’s no way I’d buy a pancake mix at an extra cost when the ingredient list here is so simple.  I already have all of these things in my house at all times!  You’ll want a large mixing bowl and simply add in your beautiful sourdough starter along with the milk, egg, avocado oil and other dry ingredients.

Optional Tip

You can absolutely whisk these up and allow them to sit for 15-20 minutes.  I find this results in an even fluffier pancake and give you the best results.

To Serve

Once they are cooked well on each side, on a cast iron skillet or hot griddle if you have it, you’ll want to enjoy these delicious pancakes immediately.  I love making small pancakes for my toddler which come in handy for snacking throughout the day too! 

These are best served warm with butter and real maple syrup.  Fresh berries would be wonderful with them in the spring time and if you don’t have avocado oil you can use melted coconut oil as well.  Adding chocolate chips is always an option too!

Quick, Easy and Fluffy Sourdough Discard Pancakes

Servings 6

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 TBSP granulated sugar I use cane sugar
  • 1 cup sourdough starter active or discard both work
  • 1 ½ cups whole milk
  • 1 egg
  • 2 TBSP avocado oil melted butter can also be used
  • maple syrup for serving
  • 4-6 tbsp butter for the griddle

Instructions
 

  • Mix everything together in a large mixing bowl. You can easily double this for a larger crowd.
  • Heat a cast iron griddle and using 1/2 cup pour your pancake mix onto hot buttered griddle. Cook for 2-3 minutes per side.
  • When the pancakes start to show bubbles you know it's time to flip them!
  • Enjoy warm with butter and real maple syrup!

Notes

To reheat I like to put maple syrup on them and heat for 45 seconds to a minute.  They won’t last long, enjoy!
