Quick, Easy and Fluffy Sourdough Discard Pancakes

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 TBSP granulated sugar I use cane sugar
  • 1 cup sourdough starter active or discard both work
  • 1 ½ cups whole milk
  • 1 egg
  • 2 TBSP avocado oil melted butter can also be used
  • maple syrup for serving
  • 4-6 tbsp butter for the griddle

Instructions
 

  • Mix everything together in a large mixing bowl. You can easily double this for a larger crowd.
  • Heat a cast iron griddle and using 1/2 cup pour your pancake mix onto hot buttered griddle. Cook for 2-3 minutes per side.
  • When the pancakes start to show bubbles you know it's time to flip them!
  • Enjoy warm with butter and real maple syrup!

Notes

To reheat I like to put maple syrup on them and heat for 45 seconds to a minute.  They won't last long, enjoy!
