Quick, Easy and Fluffy Sourdough Discard Pancakes

Ingredients
2
cups
all purpose flour
2
tsp
baking powder
1
tsp
baking soda
2
TBSP
granulated sugar
I use cane sugar
1
cup
sourdough starter
active or discard both work
1 ½
cups
whole milk
1
egg
2
TBSP
avocado oil
melted butter can also be used
maple syrup
for serving
4-6
tbsp
butter for the griddle
Instructions
Mix everything together in a large mixing bowl. You can easily double this for a larger crowd.
Heat a cast iron griddle and using 1/2 cup pour your pancake mix onto hot buttered griddle. Cook for 2-3 minutes per side.
When the pancakes start to show bubbles you know it's time to flip them!
Enjoy warm with butter and real maple syrup!
Notes
To reheat I like to put maple syrup on them and heat for 45 seconds to a minute. They won't last long, enjoy!
