My Favorite Fluffy Apple Butter Spiced Pancakes
This recipe is one of my all time favorites that I’ve ever created. At the beginning of my career in food writing, because that’s what this is after all, I created these. Not all recipes I could say, “wow, that’s the best” but for this one, I really do love it and hope you do too!
Apple Butter Anyone?
When given the choice of what to use apple butter for, I’d make these fluffy pancakes this time of year with our favorite apple butter over an ordinary pancake recipe any day. All hyperboles aside, this truly is a fall favorite, in fact, I think I need to make them for my family today!
We make a lot of eggs and waffles in our home. Pancake batter while quick to come together, requires a bit more labor or love to flip a bunch of pancakes until golden brown. Since I always at least double batch recipes, pancakes can take some more time.
This recipe would be great for a Sunday morning, or a breakfast-for-dinner night with a side of crispy bacon or eggs. Warm maple syrup at the table, some coffee and you’re set!
All the Flavor
If you haven’t already noticed, I love to pack recipes with a lot of flavor. Whether that’s spice in a chili or ginger and cinnamon in a muffin, I’m all about food not being bland. This pancake mix is no different. However, thanks to the delicious jar of apple butter, homemade or store bought, you’ll love the level of rich apple flavor these apple pancakes give you.
While most breakfasts these days are consumed more quickly and with a lukewarm cup of coffee, these pancakes cause me to sit and enjoy. The boys love them as well with their favorite fall flavors, which results in a mealtime that’s made a bit quieter with hungry boys gobbling up pancakes filled with warm spices. What a good life they have!
Time to Cook
To make these you’ll want two bowls, one small bowl and one medium bowl if possible and a good skillet for flipping. I see a lot of people like counter top skillets which I don’t have, yet. I opt for our cast iron skillet which thankfully fits on our induction range.
I like a good apple butter low in high fructose corn syrup, artificial colors and flavors. This time of year you can likely find a great apple butter at your local farmers market made not far from your home. Apple picking recently? The prep time here is minimal, because like you I’m looking to feed my family quickly! Make sure you have everything before you begin and the total time you spend making these should be under 30 minutes.
Once everything is incorporated, no need to let the batter rest. I’ve made recipes like that before, and while they were delicious, remember, we’ve got hungry kids to feed! While you’re heating the skillet have some butter ready to use on the pan and your spatula ready for flipping.
I like to use butter on skillets for the best results on pancakes and don’t love oil here. I find the taste gets too much in the pancakes and the perfect way to keep the flavors you want to taste in there is to use butter on the skillet, not olive oil or nonstick spray.
With the wet ingredients and dry all mixed together, you’ll want to pour the batter using a 1/4 cup measuring cup. That seems to be the perfect tool in my opinion to use for making pancakes. Allow them to cook about 2-3 minutes per side and once bubbles appear you’ll flip them, allow to cook a couple more minutes and you’re ready to eat!

Ingredients
- 2 2/3 cup flour
- 6 tbsp sugar
- 1 tbsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 6 tbsp melted unsalted butter plus more for skillet
- 3 eggs lightly beaten
- 1 cup light sour cream
- 1 1/2 cups Apple Butter
- 1 3/4 cups whole milk
Instructions
- In a large bowl mix the flour through the salt and in another bowl mix the melted butter through milk.
- Combine the wet and dry ingredients and stir until combined.
- Heat and butter a griddle then pour about 1/4 cup of batter for each pancake.
- Allow the pancakes to bubble and flip when golden, about 2 minutes per side.
- Serve warm with good maple syrup and enjoy!
