Easy One Bowl Melt in Your Mouth Homemade Brownies
I’m writing to you from a quiet house that will soon be noisy with people eating up these yummy brownies. I’m pretty maxed out by the end of the week. I think we all are. Whenever I have a few moments I’m thankful to write and cook. I’ll always come back to those things.
Reading helps me too of course. First thing in the morning it’s the Bible, and when I’m disciplined enough the evenings are me turning off my phone and opening my kindle to a good book.
This is an easy homemade brownies recipe that’s so good to have in your back pocket. If you’re opting to cook whole foods and avoid consuming food with ingredient labels that take far too long to read, this ones for you. If you love a one bowl easy recipe that results in brownies that melt in your mouth and resemble molten chocolate cake, this one is also for you.
So, the next time you’re at the grocery store pick up some really good baking chocolate and remind yourself to make this brownie batter. I really think they’re the best brownies and can’t imagine buying a box mix ever again! Remember, its cold and soon to be snowy in most of the country. Homemade brownies seem like a good idea.
I have made a version of these in the past but today made them a bit more my own. I made this recipe for a 9×13 because well, I don’t know why you’d make brownies in a pan any smaller.
Double Batch and Freezing
Brownies freeze well so even if you don’t want a lot of leftovers, tuck some away in a freezer bag for the nights brownie sundaes seem like a very good idea! Depending on the baking pan you use, you could freeze them with some plastic wrap and aluminum foil over top to have on hand for the future. Having homemade baked brownies in your freezer will save you when dessert needs to happen but you’re tight on time.
Last minute friends coming over? Brownies. Hankering for chocolate? Brownies.
I’m convincing myself to make a double batch of these now. With the dry ingredients on hand and extra bars of chocolate, just in case, it may just be happening today.
Baking Times
Now, here’s the thing about these, they have a bit of a crinkly top but they’re super gooey and fudge-like inside. Yum. Depending on whether or not you use a metal pan, glass pan, or casserole dish your bake time may vary. I recently made them in more of a casserole 9×13 pan and I needed 10-15 minutes longer than the time I tell you about here.
Test them in the center with the toothpick test of that crackly top, making sure the moist crumbs are cooked through.
One Bowl Wonders
I know these aren’t healthy, but it’s called balance. They’re a perfect brownie recipe for when you have guest coming or want a treat that may last the week! I love that I can melt the chocolate and butter in the microwave and then add everything else into the same big bowl.
I like to have a prepared pan with cooking spray, parchment, and more cooking spray. I want to avoid brownie sticking to the bottom of the pans and that has worked best for me!
How delicious could these be with a little espresso powder mixed in or maybe a dash of instant coffee? If you try it, let me know. For now I’ll enjoy this easy brownie recipe with a cup of decaf coffee or, some salted caramel ice cream would work well here too. Come Christmas I’m opting for these with peppermint ice cream and crushed peppermint sprinkled on top.
They’re such easy brownies I hope you not only make them but love them! They’re cakey brownies at first and more fudgy brownies as they come to room temperature.
I love the taste of cinnamon in here but if you’re not a fan of that you could take it out. If you don’t have baking squares I recommend getting them next time you’re at the store. I’m sure you could try subbing out chocolate chips here and just weight the chocolate to make sure you have 8 ounces but I’m not sure how that’ll go!
Easy One Bowl Melt in Your Mouth Homemade Brownies
Ingredients
- 8 ounces unsweetened chocolate baking squares
- 1 1/2 cups unsalted butter
- 3 cups granulated sugar
- 1 cup firmly packed brown sugar
- 6 eggs
- 2 cup flour
- 1 tbsp vanilla extract
- 1 tsp salt
- 1 1/2 tsp cinnamon
Instructions
- Preheat the oven to 350. Line the bottom of the pan with parchment paper allowing a bit of a lip on the sides. Spray with cooking spray.
- Microwave chocolate and butter in a large bowl until melted and smooth, stirring every 30 seconds – 1 minute until everything is melted.
- Whisk in granulated sugar and brown sugar.
- Next add eggs one at a time until they are each incorporated. Now whisk in the flour, vanilla, and pinch of salt.
- Pour into the prepared pan and bake for 40-45 minutes. Things may take longer so just use a toothpick to check. Mine cooked for about 45-50. Since they're a bit gooey inside and I didn't want them to be dry the toothpick was moist but not runny.
- Allow these to cool then cut into squares.
