Refrigerator Bran Muffins

These muffins will transform your mornings. Mix up a lot of batter and have fresh muffins for days!

Ingredients
  

  • 4 eggs
  • 1 cup honey
  • 1 cup avocado oil
  • 1 quart buttermilk
  • 6 cups bran cereal with raisins
  • 1 cup sugar
  • 1 tsp salt
  • 5 cups all-purpose flour
  • 5 tsp. baking soda

Instructions
 

  • Whisk your wet ingredients together in a medium bowl, eggs through buttermilk.
  • In a large bowl with lid, combine the dry ingredients and mix. Stir in the wet ingredients and incorporate.
  • Combine well and store in the fridge overnight until you're ready to use!
  • When you're ready to bake, preheat oven to 350.
  • Bake in greased muffin tins for 20 minutes until a toothpick comes out clean.
  • Allow to sit in muffin tins for 3 minutes and then remove from muffin tins and allow to cool on a wire rack.
  • Enjoy warm with butter or save and freeze them for later!

Notes

I love having the batter on hand but have also made up the entire recipe and then put the cooked muffins in my freezer. 
I find it yet another super power feeling knowing you can defrost muffins the night before what you know will be a busy morning getting out the door.
