Refrigerator Bran Muffins
These muffins will transform your mornings. Mix up a lot of batter and have fresh muffins for days!

Cook Time 20 minutes mins
- 4 eggs
- 1 cup honey
- 1 cup avocado oil
- 1 quart buttermilk
- 6 cups bran cereal with raisins
- 1 cup sugar
- 1 tsp salt
- 5 cups all-purpose flour
- 5 tsp. baking soda
Whisk your wet ingredients together in a medium bowl, eggs through buttermilk.
In a large bowl with lid, combine the dry ingredients and mix. Stir in the wet ingredients and incorporate.
Combine well and store in the fridge overnight until you're ready to use!
When you're ready to bake, preheat oven to 350.
Bake in greased muffin tins for 20 minutes until a toothpick comes out clean.
Allow to sit in muffin tins for 3 minutes and then remove from muffin tins and allow to cool on a wire rack.
Enjoy warm with butter or save and freeze them for later!
I love having the batter on hand but have also made up the entire recipe and then put the cooked muffins in my freezer.
I find it yet another super power feeling knowing you can defrost muffins the night before what you know will be a busy morning getting out the door.
